🍑 Mini Peach Upside-Down Cookies

Ingredients

  • 1–2 ripe peaches, thinly sliced

  • ¼ cup brown sugar

  • ¼ cup melted vegan butter or dairy butter

Instructions

  1. Preheat oven to 350 °F (175 °C). Line a baking sheet with parchment paper and lightly grease it.

  2. In a small bowl, toss peach slices with brown sugar until coated.

  3. Arrange peach slices in a single layer on the baking sheet.

  4. Drop a piece of cookie dough over each peach slice, covering about half.

  5. Bake for 10–12 minutes, until edges of the cookie are golden and peaches are bubbly.

  6. Let cool for 5 minutes before gently lifting each cookie with a spatula—flip them peach-side up for the “upside-down” reveal.
