Instructions
Preheat oven to 350 °F (175 °C). Line a baking sheet with parchment paper and lightly grease it.
In a small bowl, toss peach slices with brown sugar until coated.
Arrange peach slices in a single layer on the baking sheet.
Drop a piece of cookie dough over each peach slice, covering about half.
Bake for 10–12 minutes, until edges of the cookie are golden and peaches are bubbly.
Let cool for 5 minutes before gently lifting each cookie with a spatula—flip them peach-side up for the “upside-down” reveal.
