🍲 Loaded Baked Potato Soup (Instant Pot Recipe)

There’s something about a big bowl of creamy, hearty potato soup that feels like a hug from the inside out. This Instant Pot version comes together quickly, is naturally gluten-free, and is the perfect cozy dinner for chilly fall nights. We love serving it with crispy bacon, rotisserie chicken, and a sprinkle of cheese (or no cheese for a dairy-free option) — or even scooping it up with Fritos.

This recipe fits in a 6-quart Instant Pot.

🥔 Ingredients

  • 8 pounds potatoes, peeled and cut into bite-size chunks

  • 1–2 tbsp olive oil

  • 1 small to medium onion, grated

  • 1 medium carrot, grated

  • 2 cloves garlic (optional), minced or grated

  • Salt and pepper, to taste

  • 2 (32 oz) cartons vegetable or chicken broth

  • 1 can coconut cream (the thick kind, not coconut milk)

  • 1 small frozen bag of corn (sweet or mixed)

  • Optional toppings: shredded rotisserie chicken, shredded Colby Jack cheese, sour cream, crispy bacon, chives

Instructions

  1. Sauté the aromatics:
    Set the Instant Pot to Sauté (or Simmer) mode and add a swirl of olive oil. Grate in the onion, carrot, and garlic. Add salt and pepper and cook for a few minutes until softened and fragrant.

  2. Add potatoes & broth:
    Stir in the peeled, chopped potatoes. Pour in about half of one carton of broth (roughly 16 oz). Close the lid and set to Pressure Cook for 15 minutes.

  3. Release & add more broth:
    Carefully quick-release the pressure. Add another full carton of broth (32 oz) and gently mash/stir the potatoes to break some up — you want a mix of smooth and chunky texture. Add salt and/or pepper to taste.

  4. Make the creamy base:
    In a measuring cup, combine the remaining half carton of broth with the can of coconut cream. Blend with an immersion blender until smooth, then pour it into the pot.

  5. Add corn and simmer:
    Stir in the frozen corn. Set the Instant Pot back to Sauté (low) and let everything warm through for 5–10 minutes. Taste and adjust salt and pepper if needed.

  6. Serve & top:
    Ladle into bowls and top with shredded cheese, rotisserie chicken, crispy bacon, and a dollop of sour cream.
